Florida Herbs
Because
the commodity of ‘herbs’ is extremely varied, it is difficult
to classify all herbs into one category. Parsley, for example, is
classified as a salad crop even though it is rarely used in salads.
However, it is also rarely used as a flavor
enhancer like most herbs. Many herbs can also be grown solely for
seed production, such as cilantro (coriander) and fennel, even though
the vegetative material is also widely used. There has also been a
sharp rise in herb production for medicinal purposes, such as echinacea,
goldenseal, and St. John’s wort. The production and consumption
of fresh herbs has also risen in the past few years. Palm Beach County
produces a significant amount of fresh herbs, such as basil and cilantro,
as well as parsley in both the sandlands and the EAA.
